Tonight's dinner is a quick one, for all of my friends out there who want to eat real food, but find themselves without much time to cook.
For this recipe, I used:
-2 bags of organic frozen and diced sweet potatoes
-2 cups frozen pesticide-free precut leeks
-juice of 1 organic lime
-1 15-oz. can organic black beans
-pinch of curry powder
-iodized salt to taste
How I made it:
Drain beans and set aside.
Cover the bottom of the pan in olive oil, then turn heat to medium-high. Add leeks first, then curry powder. Sautée until leeks are a bit soft.
When leeks are getting soft, add the sweet potatoes. Squeeze the lime juice over the mixture. Cook until sweet potatoes are soft, stirring occasionally.
Add beans just before the sweet potatoes are fully cooked, and continue cooking until all ingredients are fully heated through.
Add salt if desired upon serving.
